A new month means a new evening menu full of delicious meals from our team of outstanding chefs. Here’s the chef’s choices for their favourite dishes on the June menu:
Samuel Squires – Merryfield Duck Breast
Sam’s recommendation is the Merryfield Duck Breast, accompanied with cherry, sweet potato and red chicory. He described the dish as ‘sweet, juicy and rich’ and loves the versatility of duck across all kinds of dishes, giving him freedom to incorporate interesting flavours.
Daniel Francesco Catalano - Butter Poached Halibut
Dan’s goes back to his Italian roots in this Halibut dish, which is accompanied with fennel, beurre blanc, olives, tomatoes, gnocchi (which Dan is particularly a fan of) and nduja, a spreadable Italian sausage which originated in the Calabria region. One for diners who enjoy Mediterranean cuisines, as well as light and summery dishes.
Adam Forster – Strawberry Mousse
Adam’s specialty is in desserts and pastries, so trust him when he recommends this gorgeous strawberry mousse. Paired with a traditional strawberry compliment of white chocolate, as well as a more innovative sweet balsamic tonka bean, creating an intriguing and enticing taste profile. A perfect way to cap off your meal.
